Pineapple Tarts 凤梨酥/黄梨挞

收工了!This will be my last post of cookies prepared for Chinese Lunar New Year.
Wishing All Readers A Happy Chinese New year! 新年快乐 虎年行大运!

Pineapple Tarts are considered a festive cookie, popular in Singapore, Malaysia and Taiwan ~consumed during the Chinese New Year. These are small bite size pastries filled with pineapple jam which made in typical shapes include a flat open tart topped with pineapple jam or rolls filled with pineapple jam.




    Ingredients:

250g Cold butter
1 Egg
75g Custard powder
140g Icing sugar
440g Plain flour
1 tsp Honey
1 tsp Vanilla essence
1/8 tsp Egg yellow colour

1 kg Pineapple jam (roll jams into small balls, about 12g each)






Method:
  • In a mixing bowl put cold butter (cut cubes), honey, vanilla essence, egg yellow colouring, egg and icing sugar together and mix roughly till mixtures crumbly (30 seconds). Then add in the plain flour and custard powder and mix the mixtures for another 30 seconds.
  • Place mixtures on to dusted flour table and knead to a smooth dough.
  • Divide dough into small portions (about 12g each) and wrap with pineapple jam. Use a roller pin to create design.
  • Bake at 180C for about 15 mins.

  3. Anncoo! My mom is baking this too. But yours are so proper in size. My mom always make the huge one with the leaf shapes (@.@) Oh is this the last cookies baking for CNY? I feel want to see more because all your cookies are amazing (^.^)

    CNL: Yep no egg wash. I added little egg yellow colouring in the pastry. Will post recipe after the holidays.

  17. All these marvelous traditional treats for Chinese New Year - I want them all! I'll definitely try making some myself but in the meantime, I know of a great bakery that specializes in different Chinese pastries - time for a visit!

Start with the simplest one first like almond cookies~no need machine, just mix well and no need cookie cutter, just roll into a small ball and press down gently and bake. She will definitely love it.
