Coconut Banana Friands

Ingredients
  • 90g Butter, melted
  • 70g Icing sugar
  • 45g Plain flour/ cake flour
  • 55g Dessicated coconut
  • 3 Egg whites (105g)
  • ½ tsp Vanilla extract
  • 2 small bananas, sliced
Instructions
  1. Preheat oven to 180 deg C. Grease well a mini muffin pan or friand pan.
  2. Sift the flour and icing sugar into a large bowl, then add in dessicated coconut and mix well.
  3. Place egg whites in a small bowl and lightly froth with a fork. Add to dry ingredients with melted butter and vanilla extract, stirring until just combined. (method same as here)
  4. Fill each muffin hole two-thirds full. Slice banana to a thickness of about 0.5cm and place on top of the batter. Bake for about 20-25 minutes or until golden.
  5. Remove from the oven, leave friands in pan for 5 minutes before turning out onto a cooling rack.
  6. Best to serve warm.
