Kueh Kodok (Deep Fried Banana Balls)

  • 130g Plain flour
  • ¼ tsp Baking powder
  • 1 tsp Rice flour
  • pinch of salt
  • 300g ripe banana (peeled and mashed)
  • 60g Sugar or to taste (depends on the sweetness from the banana you use)
  1. In a bowl, mash the ripe banana and combine well with the rest of the ingredients.
  2. Let the batter rest for 15 minutes.
  3. Use an ice-cream scoop (grease with some oil.so the banana batter will slip into the hot oil easily), scoop a spoonful of batter and deep fry in a medium hot oil till golden brown.
  4. Place the banana balls on a kitchen tissue to drain away oil before serve.
