Melt In Your Mouth Shortbread Cookies

Ingredients
  • 80g Plain flour (1/2 cup)
  • 70g Corn flour (corn starch) (1/2 cup)
  • pinch of salt
  • 120g Butter (1/2 cup) - room temperature
  • 24g Icing sugar (3 tbsp)
  • ½ tsp Vanilla extract
  • extra icing sugar for dusting
Instructions
  1. Sieve flour, corn flour and salt together and mix well in a bowl.
  2. Beat soft butter and icing sugar till fluffy. Add vanilla extract, beat at high speed for 30 seconds.
  3. Add flour ingredients to form crumbly dough at low speed.
  4. Form dough to smooth with a rubber spatula and place it into a plastic bag, chill for 1 hour.
  5. Dust some flour on counter top and knead chilled dough again with a pair of plastic gloves.
  6. Pinch off some dough and lightly form into a ball (about 11-12g) and place onto a lined baking tray.
  7. Bake in preheated oven 175 deg C for about 15 - 17 minutes or to lightly browned.
  8. Cool completely and dust some icing sugar over cookies before storing in an airtight container.
