Flourless Blueberry Apple Muffins

Serves: 6 muffins
  • 150g Almond meal (ground almond)
  • 1tsp Baking powder
  • 2 Large eggs (70g each)
  • 2 tbsp Vegetable oil
  • ½ tsp Ground cinnamon
  • 1 tbsp Honey (I used 3 tbsp)
  • 1 small red apple, cored, chopped into small chunks peeled
  • 100g Fresh/frozen blueberries
  1. Preheat the oven to 170C.
  2. Line a muffin tray with 6 paper liners.
  3. In a large mixing bowl, combine the almond meal and baking powder together. Add eggs, oil, ground cinnamon and honey to form a batter.
  4. Fold in the apple and blueberries and spoon the batter into the prepared muffin tray.
  5. Bake for 35 minutes until a skewer inserted is clean and the crust are nice and golden.
