Potato Loaf with Chia Seeds

Serves: 1 loaf
  • 220g Self raising flour
  • 60g Caster sugar
  • 500g Potato, peeled and grated
  • 95g Butter, melted and cooled
  • 1 large Egg (70g), light beaten
  • 1tsp Vanilla extract
  • 40g Chia seeds
  • extra chia seeds for topping
  1. Preheat oven to 170C. Line a small loaf pan and sides with paper.
  2. Sift flour into large mixing bowl. Add sugar and chia seeds, mix well followed by grated potato, mix well again with wooden spoon. Make a well in the centre. Add melted butter and beaten egg. Stir with a wooden spoon until just combined, do not overbeat.
  3. Spoon mixture into prepared tin, smooth surface, sprinkle with extra chia seeds. Bake for about 50 minutes or until skewer comes out clean when inserted in the centre of loaf.
  4. Leave loaf in tin for 3-5 minutes before turning it onto a wire rack to cool.
