Combine mashed potato, cheese, sifted flour, corn flour and egg in a bowl. Add salt and pepper to taste. Stir with a rubber spatula until mixture combined and spoon equally into 2-3 ramekins. Sprinkle more grated cheddar cheese on top.
Bake at preheated oven 180C for about 15-20 minutes or until golden brown and serve immediately.
