Cheesy Potato 乳酪马铃薯泥

Ingredients
  • 400-450g Potato, skinned, cooked and mashed
  • 30g Butter, softened
  • 80g Cheddar cheese, grated
  • 1 tbsp Plain flour
  • 1 tbsp Corn flour
  • 1 tsp Salt, or to taste
  • 1 Egg, lightly beaten
  • extra grated cheddar cheese for topping
Instructions
  1. Mash cooked hot potato and butter with a fork.
  2. Combine mashed potato, cheese, sifted flour, corn flour and egg in a bowl. Add salt and pepper to taste. Stir with a rubber spatula until mixture combined and spoon equally into 2-3 ramekins. Sprinkle more grated cheddar cheese on top.
  3. Bake at preheated oven 180C for about 15-20 minutes or until golden brown and serve immediately.
