Apple Cheese Cupcakes 苹果艺士小蛋糕

  • Ingredients: (A)
  • ½ tbsp Butter
  • 3 Green apples, peeled and diced
  • ½ tsp Cinnamon powder
  • 55g SugarIngredients (B):
  • 100g Butter
  • 80g Caster sugar
  • 3 Eggs, 70g each
  • 125g Cream cheese
  • ½ tsp Vanilla extract
  • Grated of 1 lemon zest
  • 1 tbsp Lemon juice
  • 120g Plain flour
  • ½ tsp Baking powder
  • 50g Ground almond
  • Desiccated coconut
  1. Melt butter in a saucepan. Add in the remaining ingredients A and stir fry over low heat until apple cubes soft. Dish up and set aside.
  2. Cream butter and caster sugar until fluffy. Add in eggs one at a time and beating well after each addition.
  3. Add cream cheese and continue to beat until the mixture is smooth.
  4. Add in the remaining ingredients B and the apple mixture and stir well with a hand whisk.
  5. Scoop the batter into paper cups and sprinkle disiccated coconut on top.
  6. Bake in the preheated oven at 200C for 15 minutes. Remove and leave to cool before serving.
