Blueberry Lime Jelly 蓝莓酸柑果冻

Ingredients
  • Lime Jelly Layer Ingredients
  • 500ml water
  • 120g sugar
  • 2 tbsp lime juice
  • zest from 2 lime
  • 15g gelatin powder, soaked with 2 tbsp water

  • 250g blueberries
  • 120g sugar
  • 250ml water
  • 1 tbsp lime juice
  • 15g gelatin powder, soaked with 2 tbsp water
Instructions
  1. Lime Jelly Layer -
  2. Heat water, sugar, lime juice and lime zest in a pot. Stir to almost boiling. Add bloomed gelatin and bring to boil again, stirring constantly. Turn off heat and sieve with a strainer.
  3. Tilt 6 small glasses at an angle on an egg tray or muffin tray. Pour jelly liquid into glasses. Refrigerate for 2 hours or till set.
  4. Blueberry Layer -
  5. Boil blueberries and sugar in a pot. Mash blueberries with a rubber spatula. Turn off heat.
  6. Press mashed blueberries through a strainer.
  7. Add water and lime juice, stir well and bring to almost boiling. Add bloomed gelatin and bring to boil again. Turn off heat and cool to room temperature.
  8. Remove glasses of set lime jelly from egg tray and stand them up right. Gently pour blueberry jelly liquid onto set lime jelly.
  9. Chill for few hours or overnight till set. Decorate as desired.
