Pumpkin Pickles

  • 300g pumpkin
  • 80g white vinegar
  • 130g caster sugar or to taste
  • 5 preserved plum
  • 1 chilli
  1. Combine white vinegar and sugar in a small pot, bring to boil till sugar melted. Add in plums and chilli and leave mixture to cool.
  2. Clean pumpkin, peeled and slice thinly.
  3. Combine vinegar liquid and sliced pumpkin together. Marinate pumpkin pickles for at least 30 – 60 minutes or chill overnight before serving.
