Cheesy Chicken Casserole

  • 500g cooked chicken breast (I used leftover roast chicken)
  • 1 can cream of chicken soup or cream of mushroom soup (300g)
  • 150ml fresh milk
  • 3 large eggs
  • 1 onion, shredded (about 150g)
  • 50-100g broccoli, cut small
  • 100g mozarella cheese, shredded
  • 1 tbsp coriander leaves, cut finely
  • dash of black pepper
  • 6 ramekins, grease with butter or use cupcake liners
  1. Cut cooked chicken into cubes. Fry shredded onion with oil till fragrant and dish up.
  2. In a large bowl, combine cream of chicken, milk and eggs together, whisk to combine. Then add in all the reminding ingredients, mix well.
  3. Pour mixture into the dish (or foil paper cups). Scatter more mozarella cheese on top with a dash of black pepper.
  4. Bake in the preheated oven 180 deg C for about 40 - 45 minutes until golden brown.
