1 litre vegetable or chicken broth (Swanson brand)
salt and pepper to taste
Instructions
Trim the broccoli stems and sliced. Cut broccoli to florets, soak in salt water for a few minutes, then rinse and drain. Chop celery and onion into pieces.
Heat pot with olive oil at medium heat, fry onion for a few minutes. Add garlic, broccoli stems and celery, fry for another 2-3 minutes until fragrant.
Then add vegetable broth and bring to boil. Cover with lid and simmer for 2-3 minutes at medium heat. Lastly add broccoli florets and simmer for another 2-3 minutes until vegetables softened.
Leave vegetable soup to cool down a little and blend the vegetable to smooth.
Heat up broccoli soup again and add salt and pepper to taste. Serve immediately.
