Broccoli Vegetable Soup

Ingredients
  • 600g broccoli
  • 2 sticks celery
  • 1 large onion
  • 1 tbsp chopped garlic
  • olive oil
  • 1 litre vegetable or chicken broth (Swanson brand)
  • salt and pepper to taste
Instructions
  1. Trim the broccoli stems and sliced. Cut broccoli to florets, soak in salt water for a few minutes, then rinse and drain. Chop celery and onion into pieces.
  2. Heat pot with olive oil at medium heat, fry onion for a few minutes. Add garlic, broccoli stems and celery, fry for another 2-3 minutes until fragrant.
  3. Then add vegetable broth and bring to boil. Cover with lid and simmer for 2-3 minutes at medium heat. Lastly add broccoli florets and simmer for another 2-3 minutes until vegetables softened.
  4. Leave vegetable soup to cool down a little and blend the vegetable to smooth.
  5. Heat up broccoli soup again and add salt and pepper to taste. Serve immediately.
