This very nutritious and mild sweet winter melon soup is very easy to prepare at home without much fuss and perfect for hot weather

  1. Blanch pork ribs in boiling water for one minute to remove impurities, rinse and drain.
  2. Chop winter melon to chunk sizes (remove rind and seeds).
  3. Place pork ribs, ginger slices, dried scallop, winter melon and water into pot. Bring water to boil and simmer at low heat for about an hour till pork is tender and winter melon becomes translucent.
  4. Lastly add goji berries and some salt to taste, stir well and simmer for another ten minutes. Serve immediately.
