Tau Huay (Soya Milk) Jelly Mooncakes 豆奶仙草菜燕月饼
- For making grass jelly filling - use round plastic cup that is smaller than the jelly mould. (see picture)
- Boil water, sugar, agar agar powder and pandan leaves together in a pot at medium heat.
- Keep stirring mixture with a hand whisk until liquid boiled. Discard pandan leaves and off heat. Add grass jelly strips into it, stir well with a spoon for another minute.
- Pour grass jelly liquid into 12 plastic cups evenly and leave to set in fridge for about 15 minutes.
- For Tau Huay (Soya Milk) Jelly - mix all ingredients in a pot, bring to boil at medium heat.
- Keep stirring during the process so that it will not be burnt. Off heat and stir for another minutes.
- Pour some soya milk liquid into moulds till half full. Gently scratch set grass jelly filling with a sharp knife. This will make the agar agar jellies stick together.
- Place one piece of grass jelly filling in each mould, then fill up the mould with soya milk.
- Cool and chill jelly mooncakes to set in the refrigerator
豆奶仙草菜燕月饼
- 250克 清水
- 3.5汤匙 糖
- 1茶匙 菜燕粉
- 2叶 香兰叶
- 00克 仙草,切条状 (未加糖或有糖粉都可以,随个各人喜欢)
- 500克 低糖豆奶
- 125克 鲜奶
- 45克 糖
- 2茶匙 菜燕粉
- 准备12个小过菜燕月饼模子的圆形朔料杯子(请看图)。
- 用中火,糖,菜燕粉和香兰叶煮开。
- 不停搅拌至滚,然后关火,拿掉香兰叶。加入仙草条,继续搅拌1分钟。
- 将煮好的仙草条液分别倒进12个朔料杯子至半满,放进冰箱冷藏15分钟。
豆奶外皮做法:
- 将所有的材料放进小锅里,以中火煮滚,需不停的搅拌,以免烧焦。关火后,继续搅拌1分钟。
- 倒豆奶液入模子至半模满。 用刀子轻刮凝固了的仙草菜燕,这样两者才互相粘在一起。
- 把一块仙草菜燕,放入以半凝固的豆奶菜燕上,然后再倒入另一半的豆奶液至腌盖整个月饼模子。
- 待稍冷后,收入冰箱凝固即可享用。

Hi Ann,Great idea!Can I ask one thing? How do you ensure that the grass jelly filling ends up in the middle part of the mooncake? I would imagine that the set grass jelly filling would either float or sink in the soya milk liquid.
Hi Tim & Phong Hong,When you add the first half liquid to all the moulds, by the time when you come back to the first one the liquid is almost semi set. If you find the grass jelly filling sinks to the bottom you can use a fork to lift it up a little. You have to work this quickly because the soya milk and grass jelling filling will not stick together if the soya milk liquid is already cool down.

You mean this agar agar mooncake? Store it in a box and can last for a week as long as your jelly is not too watery. Remember to keep stirring the liquid when boiling.
Hi, I hv tried your recipe twice but the tau huay dont seems to set, very soft. Any idea? Do I have to add some more agar agar powder?

Hi Janice, When boiling agar agar you need to keep stirring the liquid and after switching off the fire, stir for another 1-2 minutes. This method will harden the jelly after chilled.

Hi, may I know how am I suppose to make the grass jelly not visible on the surface as shown in your picture? I tried but failed
Hi Iorna,Actually some of my tauy huay mooncakes are still a little visible on the surface. You can wait until the tau huay semi-set before adding the grass jelly but make sure the remaining tau huay is hot or gently reboil it. Otherwise the grass jelly will not sticks together with the tau huay.

Li Shuan, you can try this. If you love soft texture like panna cotta can reduce the agar agar powder a little.

Hi Ann, may I know the size of your jelly mould and filing cups pls?
Hi Zoe, I don’t have the exact size of the filling cup. Just use those plastic cup for containing sauces, size slightly smaller than the mould. The jelly silicon mould was from Phoon Huat. You can use other mould like the pandan jelly mooncakes, size measurement no need to be too exact, just estimate.

Dear Ann, I made it during weekend with shortcut whereby just use the grass jelly directly after cutting… My skill is no good, the filling sinks to bottom so it doens't look nice. However, the combination of soya and grass jelly is just perfect! We all love it, thank you very much for this superb recipe 🙂
Kah Chin, Sorry that I've not read your previous comment. So you used the sweetened grass jelly. I'm sure its taste better if you've have a sweet tooth. I think mix the grass jelly and soya milk together also look pretty.
