Quick and comforting home cooked savoury dish to serve with white porridge or hot rice

Ingredients
500gwinter melon
180gminced pork ground pork
1tspminced ginger
1tbsptau chiewpreserved soya beans
Seasoning
1/2tsplight soy sauce
1tspdark soy sauce
1tspsesame oil
1/4tspchicken powder
1/4tspcorn flour
120mlwater
Instructions
Chop winter melon to cubes (remove rind and seeds).
Heat wok and add 2 tablespoons cooking oil, fry ginger and garlic for a while and add preserved soya beans and continue to stir fry to aromatic.
Add minced pork, fry well and add seasoning, followed by winter melon cubes. Bring mixture to boil, cover with a lid and lower heat and simmer for about 15-20 minutes till winter melon becomes translucent.
Dish up and garnish with some cut spring onion and serve with hot rice or porridge.
