These cranberry butter cupcakes are very delicious and the ingredients can be easily combined.  Thanks to Cheah from No-Frills Recipes for sharing this recipe. The cupcakes are fluffy, tangy, citrusy and buttery. I find that adding dried cranberries to these cupcakes will give them a more classic look and if you put a pretty tag on them, that will make them perfect for the coming Christmas holidays. Alternatively you may like to add any other dried fruits you have on hand or with some chocolate chips that kids love most.

Cranberry Butter Cupcakes

Ingredients
 

  • 115 g salted butter
  • 70 g caster sugar
  • 2 large eggs - lightly beaten
  • 100 g self-raising flour - sifted
  • 30 ml fresh milk
  • 60 g dried cranberries - cut into smaller pieces and dust with flour
  • zest from 1 lemon
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

Instructions
 

  • Sift the self-raising flour and set aside.
  • Beat the butter, sugar and lemon zest till light and creamy.
  • Slowly add in the beaten eggs, until mixture incorporated, mix well. Add in lemon juice and vanilla extract, mix well.
  • On low speed, fold in the flour, alternating with the milk. Mix till well incorporated.
  • Add in the dried cranberries and fold well with a rubber spatula.
  • Scoop the batter into the 9 cupcake liners in the muffin pan.
  • Bake in a preheated oven at 180 deg.C for about 25 minutes, test with a skewer till it comes out clean.

Please keep in mind that all ovens temperature and baking time varies.

  1. 自发面粉过筛,备用。
  2. 将牛油,细糖和柠檬皮屑一起打发。
  3. 慢慢的倒入鸡蛋液,搅拌均匀。加入柠檬汁和香精,再拌匀。
  4. 用低速度,将面粉和牛奶分次拌入蛋糊里,搅拌均匀。
  5. 然后加入蔓越莓干,用橡皮刮刀翻拌均匀。
  6. 玛芬烤盘内放入九个纸杯,将面糊平均舀入纸杯内。
  7. 送人预热烤箱至摄氏180度烘烤约25分钟或竹签扎入蛋糕内部不沾糊就可以了。
