Fish Maw Soup 鱼鳔汤

This is the second recipe that I adapted from Cass. When Cass posted this simple and delicious Fish Maw Soup, I quickly bookmarked and cooked this delicious soup during Chinese New Year. A very simple and satisfying soup with the prawn meat balls that my family really enjoyed very much.
Fish maw (鱼鳔 – yú biào is an excellent source of collagen and cabbage. Many Chinese people believe that drinking fish maw soup and eating fish maw will improve their complexion. Napa cabbage may reduce the risk of developing certain types of cancer. The isothiocyanates found in Napa cabbage may lower the chances of lung cancer among smokers.

Fish Maw Soup 鱼鳔汤

Ingredients
  • 80g Fish Maw
  • 1.5L Chicken broth (Swanson brand) + 800ml water
  • 300g Napa cabbage, cut to 4 cm
  • 1 tsp Salt
  • dash of pepper
  • Coriander/spring onion

  • Prawn Meatballs
  • 150g Minced pork
  • 200g Prawns without shell, blended
  • 5 Water chestnuts, peeled and chopped
  • ½ tsp Salt
  • ½ tsp Sesame oil
  • ½ tbsp Water
  • 2 tsp Cornstarch
  • ½ tbsp spring onion, cut finely
  • dash of pepper
Instructions
  1. Soak fish maw in a large basin of cold water until soft. Remove, cut into 2½cm (1 in) cubes and rinse.
  2. Mix prawn meatball ingredients together and chill for 30 minutes then divide into small portions, about 20- 25. Wet your hands and roll them into balls, this will stop the meat sticking to your hands.
  3. Heat stock in a large pot, add cabbage, salt, pepper and fish maw and simmer until cabbage is tender.
  4. When cabbage is almost done, add prawn meatballs and simmer until they rise to the surface. Garnish with coriander leaves/cut spring onion and serve immediately.

鱼鳔汤 Fish Maw Soup
材料:(6人份)
虾肉圆材料

做法:

  1. 把鱼鳔浸入水里至软(期间要不停换水至鱼鳔的油份清除),沥干水份,切成2cm块状。
  2. 把虾肉圆的材料全部混合均匀,放进冰箱腌制30分钟,然后分成小圆丸,滚圆 (手心沾点水衮虾肉圆的时候才不会粘手)。
  3. 把鸡汤放在锅里煮滚,加入包菜,盐,胡椒粉和鱼鳔焖煮至包菜变软。
  4. 然后把虾肉圆加入汤里,煮至虾肉圆浮在水面上,加入芫茜/葱粒装饰就可以趁热开吃!
