200gred dates
60gbrown sugar
600mlwater
180gtapioca starch flour
100gglutinous rice flour
35mlcorn oil
Instructions
Rinse red dates and cut into half, remove seeds. Then chopped red dates into smaller pieces and soak with water for 30 minutes. Place red dates into a pot together with brown sugar and add 600ml water. Bring it to a boil and simmer at low heat for 10 minutes.
Puree red dates to fine and press through a sieve.
Mix tapioca starch flour and glutinous rice flour together before adding into red date puree, fold well with a rubber spatula and lastly add oil, fold batter to smooth.
Grease plate (21.5 x 18.5cm) with little more oil or line it with non stick baking paper (also need to grease oil). Pour red date paste into steaming plate and steam at high heat for about 30 minutes until set.
Leave red date cake to cool and remove from steaming plate.
You'll find the red date a little sticky, so it's better to oil your knife for easy cutting.
