Dorayaki (ら焼き 铜锣烧) is a popular sweet snack in Japan. It's two pieces of fluffy honey pancake sandwiched with a spread of azuki paste (also known as anko). It's quite easy to make Dorayaki at home to serve as a snack for the kids to enjoy especially during the school holidays.

Ingredients
2eggs
1/2tspvanilla extract
50gcaster sugar
1tbsphoney
40mlfresh milk
100gplain flour (all purpose flour)
1/2tbspbaking powder
1/4tspbaking soda
red bean paste
Instructions
Combine flour, baking powder and soda together in a bowl, set aside.
In an another bowl, whisk egg, vanilla extract and sugar together. Add honey and milk, stir mixture well again.
Sieve in flour mixture in two portions, stir well to smooth. Then cover with cling wrap and rest for 15 minutes.
Heat up a flat frying pan at low heat, scoop a ladle of batter onto pan for about a minute. when bubbles appear on the surface. Flip pancake over and cook for about 45 seconds to 1 minute. Repeat this process until batter uses up.
Cool down the pancake on wire rack and spread red bean paste (about 10g) on one cake and sandwich with another cake. Best to serve immediately.
