This Homemade Milk Tea Pudding with Boba Pearls is delicious. The milk tea pudding is utterly smooth and complements well with boba pearls that is soft and chewy made from tapioca starch. Everyone enjoyed it at home.

Ingredients
12bagsEarl Grey Tea
700gwater
15ggelatin powder
80gcaster sugar
100gfresh milk
360gdairy whipping cream
Cook Boba Pearls
150gtapioca pearls (Boba)
2000mlwater
80gbrown sugar
50gwater
Instructions
Soak tea bags into 450g hot boiled water and let steep for about 10 minutes.
Soak gelatin powder with 2 tablespoons of water, set aside.
Remove tea bags. heat up water again at medium heat, add sugar and soaked gelatin, stir well till sugar and gelatin dissolved, off heat.
Pour in milk and whipping cream, stir mixture well and pass through a sieve.
Pour milk tea into serving cups and chill in the refrigerator to set for at least 3 hours or overnight.
Cook Boba Pearls
Sieve out crumbs from the tapioca pearls.
Bring 2000ml of water to boiling point, then add boba pearls. Gently stir the boba pearls preventing them sticking to the pot.
Boil the boba pearls for 30 minutes, then turn heat to low, cover with lid and simmer for 20 minutes. Stir the boba pearls occasionally preventing them from sticking together.
Off heat and let the boba pearls sit in the pot with lid on for another 20 minutes.
Pour out the cooked boba pearls and pass under running water for a few seconds, strain well.
In a clean pot, add brown sugar and water to boil stir till sugar dissolved. Pour in cooked boba pearls, turn to low heat, stirring mixture till thickens. Off heat and leave to cool in room temperature.
Scoop some boba pearls on top of milk tea pudding and serve. Enjoy!
