60gfresh milk
20gfresh orange juice
1orange zest
1tspvanilla extract
260gbanana - just ripe
60gcake flour or plain flour

Instructions
Lightly beat egg and sugar till sugar dissolved.
Pour in milk, orange juice, orange zest, vanilla and melted butter, stir well. Sieve in flour and baking powder, mix well to smooth.
Slice banana to about 5mm thickness and place in the batter. Fold well gently, to ensure the banana slices are coated perfectly in the batter.
Pour banana mixture into a 6 inch removable cake pan lined with parchment paper, spread banana slices evenly. Lastly drizzle melted butter on top.
Bake in preheated oven at 180 degrees C for about 40-45 minutes or when the tester inserted comes out clean.
Release pie from cake pan after about 10 minutes. Then gently remove it from cake pan as the banana pie is still very soft and easily cracks, and leave to cool down on wire rack. Dust some snow powder or icing sugar over it and serve.
