Tomato Rice was very popular on the blogosphere two years ago and many homemakers had created their own versions with by adding adding mushrooms, meat and vegetables. I had joined the craze too at that time. This whole Tomato Rice is very easy to cook and is an ideal one-pot meal (rice cooker). And this time around I added some leftover bak kwa (pork jerky) and shredded carrot. It was very delicious and flavourful that I just had to help myself to more servings.

Bak Kwa (pork jerky) Tomato Rice 肉干番茄饭
Easy to cook and is an ideal one-pot meal
Ingredients
- 1 cup long grain rice
- 1 cup water
- 1 large tomato - about 200g
- 1/2 tsp salt
- 35 g bak kwa or Chinese sausage - cut to small pieces
- some shredded carrot
Instructions
- Rinse rice and add water (or according to your normal amount) into rice cooker. Scatter bak kwa pieces, shredded carrot and salt over rice.
- Make a criss cross slit on the bottom side of the tomato and place it into the pot and start to cook rice.
- When the rice is cooked, remove tomato stem. Mash tomato with a rice paddle and toss mixture well and serve immediately.

肉干番茄饭
材料:
- 1 杯 香米
- 1 杯 水
- 1个 大番茄 (约200克)
- 1/2茶匙 盐
- 35克 肉干,也可以用腊肠,切小
- 适量胡萝卜丝
做法:
- 米洗净后放入电饭锅内加水(跟平常煮饭一样)。撒上肉干,萝卜丝和盐。
- 用小刀在番茄上画个十字架,放在锅内。开电煮饭。
- 饭煮好后压烂番茄,拿掉番茄根蒂,与饭拌均匀即可享用。
快速简单的番茄饭,“一煲熟“,真是太好吃了!
