Ingredients:
200g Chinese dried Mushrooms
200g Roast pork ~ cut to thick slices
15g Rock sugar
3 1/2 cups Mushrooms water (strained liquid from soaking mushrooms)
3/4 tsp Salt or salt to taste
Method:
- Soak dried mushrooms until soft or soak overnight & cook it the next day. Slightly squeeze excess water from soft mushrooms. Remove stems with scissors and discard.
- Heat wok with 4 tbsp of cooking oil, stir fry mushrooms until aromatic and add roast pork~fry well.
- Lastly pour in 3 cups mushrooms liquid and bring to boil then add rock sugar. Lower heat and simmer 1 1/2 hour and add salt. **When the mushrooms water beginning dries up a little add the balance 1/2 cup of mushrooms water into it.
- Garnish cooked mushrooms and roast pork with some lettuce on serving plate and serve.
