Braised Chinese Mushrooms with Roast Pork 焖香菇烧肉
Ingredients:
200g Chinese dried Mushrooms
200g Roast pork ~ cut to thick slices
15g Rock sugar
3 1/2 cups Mushrooms water (strained liquid from soaking mushrooms)
3/4 tsp Salt or salt to taste
Method:
- Soak dried mushrooms until soft or soak overnight & cook it the next day. Slightly squeeze excess water from soft mushrooms. Remove stems with scissors and discard.
- Heat wok with 4 tbsp of cooking oil, stir fry mushrooms until aromatic and add roast pork~fry well.
- Lastly pour in 3 cups mushrooms liquid and bring to boil then add rock sugar. Lower heat and simmer 1 1/2 hour and add salt. **When the mushrooms water beginning dries up a little add the balance 1/2 cup of mushrooms water into it.
- Garnish cooked mushrooms and roast pork with some lettuce on serving plate and serve.

Ann, your chinese new year celebration there was so happening… I miss Singapore so much especially the night before Chinese New Year and we all headed to China Town for buying flowers or tidbits. A sweet memory that I will always keep with me..
And now this braised chinese mushroom is precisely another sweet memory I have about celebrating new year at home. And I missed that this year!! But this recipe is what my mom used to cook in the old days (seems very long long time ago), so thanks for sharing with me… now I can cook and remember her.

my mom made this for cny too… and added chicken feet (deep fried)… yums!
I love this dish! My mom used to cook it with black moss and dried oyster. I hated the dried oyster though 😛
