Fried Seafood Tofu 炸海鲜豆腐
This easy homemade Fried Seafood Tofu is delicious, crisp on the outside, soft and moist on the inside. Perfect to serve as finger food or a side dish. It can be prepared in a relatively short time that I use a blender to mix the ingredients. The steaming time is 20 minutes. Leave the seafood tofu to cool and cut to desired shapes, then coat with cornstarch and shallow fry or deep fry at medium heat. You may also prepare the steaming one day ahead and wrap in cling wrap. Then keep the seafood tofu in the chiller and do the deep frying the next day.

Fried Seafood Tofu
Ingredients
- 600 g egg tofu
- 250 g prawn paste
- 2 large eggs
- 1/4 tsp salt - or adjust to taste
- 1/2 tsp sugar
- 1/4 tsp sesame oil
- dash of pepper
- 15 g carrot - cut finely
- 2 stalk spring onion - about 15g
- some coriander leaves, chopped - optional
- 3 tbsp cornstarch
Instructions
- Place tofu, prawn paste and eggs into a blender and blend fine.
- Add carrot, spring onion and coriander leaves into tofu mixture, mix well with a rubber spatula. Followed by sugar, salt sand pepper.
- Lastly add cornstarch and mix well again.
- Pour tofu mixture into a 7 inch lined square pan (grease oil on parchment paper), and steam for 20 minutes at high heat.
- Leave seafood tofu to cool. **may wrap in cling wrap, refrigerate till next day before deep frying**
- Cut seafood tofu into desired shapes and coat evenly with cornstarch. Then shallow fry or deep fry at medium heat to golden brown. Serve with mayo or chilli dipping sauce.
Notes
- 600克 蛋豆腐
- 250克 虾滑
- 2个 大鸡蛋
- 1/4茶匙 盐或适量
- 1/2茶匙 白砂糖
- 1/4茶匙 麻油
- 胡椒粉, 适量
- 15克 胡萝卜, 切细
- 2根 葱花 (约15克)
- 芫茜碎, 可不放
- 3汤匙 玉米淀粉
- 将蛋豆腐,虾滑和鸡蛋放入料理机里搅拌均匀.
- 加入萝卜丝,葱花及芫茜碎搅匀,然后盐,砂糖和胡椒粉,用刮刀拌均匀.
- 最后放入玉米淀粉, 再次搅拌均匀即可.
- 蒸盘(7×7寸)铺上油纸, 抹上一层油, 把豆腐混合物倒入,抹平. 放入预热蒸笼大火蒸20分钟即可.
- 取出待凉. **可提前一天蒸好,包上保鲜膜放入冰箱冷藏, 隔天才炸.
- 海鲜豆腐切块或自己喜欢的形状, 粘上玉米淀粉. 中火炸至金黄即可. 盛起配上蛋黄酱或辣椒酱享用.
- 从冰箱取出海鲜豆腐切开, 用厨房纸吸干水分才裹上玉米淀粉**
