This easy homemade Fried Seafood Tofu is delicious, crisp on the outside, soft and moist on the inside. Perfect to serve as finger food or a side dish.

Ingredients
600gegg tofu
250gprawn paste
2largeeggs
1/4tspsalt - or adjust to taste
1/2tspsugar
1/4tspsesame oil
dash of pepper
15gcarrot - cut finely
2stalkspring onion - about 15g
some coriander leaves, chopped - optional
3tbspcornstarch
Instructions
Place tofu, prawn paste and eggs into a blender and blend fine.
Add carrot, spring onion and coriander leaves into tofu mixture, mix well with a rubber spatula. Followed by sugar, salt sand pepper.
Lastly add cornstarch and mix well again.
Pour tofu mixture into a 7 inch lined square pan (grease oil on parchment paper), and steam for 20 minutes at high heat.
Leave seafood tofu to cool. **may wrap in cling wrap, refrigerate till next day before deep frying**
Cut seafood tofu into desired shapes and coat evenly with cornstarch. Then shallow fry or deep fry at medium heat to golden brown. Serve with mayo or chilli dipping sauce.
Notes
use kitchen paper to dap excess liquid after cutting the chilled the seafood tofu before coating cornstarch
