Chocolate Gateau 法式巧克力蛋糕
Chocolate Gateau also known as gâteau au chocolat (chocolate cake) in French, is easy to make with a little stirring for lazy home bakers like me. You can decorate the rich and little fudgy cake with a simple dusting of icing sugar or with whipped cream on top with fresh berries. The traditional way of making Chocolate Gateau is made with layers of chocolate sponge and rich ganache cream in between, and topped with chocolate glaze to make it more elegant and impressive to serve for any occasion.

Chocolate Gateau
Ingredients
- 135 g 70% Valrhona chocolate
- 90 g caster sugar
- 1 tsp vanilla extract
- 2 large eggs
- 80 g butter - salted
- 35 g cake flour or plain flour
Instructions
- Melt butter and chocolate to smooth at low heat under double boiler and set aside to cool.
- In another bowl, mix eggs and sugar together till sugar dissolved. Pour in melted chocolate and stir mixture till combined.
- Sieve in flour and mix well mixture.
- Pour chocolate batter into a 6 or 7 inch lined cake pan. Bake in preheated oven at 170 degrees C for about 20 minutes.
- Release cake from pan after 10 minutes and place on wire rack to cool down completely or serve it warm.
Notes
- 135克 70% – Valrhona巧克力
- 90克 细砂糖
- 1茶匙 香草香精
- 2个 大鸡蛋
- 80克 牛油 (含盐)
- 35克 底筋面粉或中筋面粉
- 黑巧克力和牛油隔水(小火)融化。搅至巧克力顺滑即可。
- 将鸡蛋和砂糖放入另一个玩中,搅至砂糖融化. 加入融化巧克力, 搅拌均匀.
- 筛入面粉,再搅拌均匀即可.
- 巧克力糊倒入6或7寸烤盘(要铺上油纸). 放入预热烤箱摄氏170度烤约20-25分钟.
- 出炉后让蛋糕连烤盘静置约15分钟才脱模放在凉架待凉或温热的状态享用。
