Homemade Ice Cream 自制冰淇淋
This Homemade Ice Cream is super easy to make. Just make one basic plain ice cream without churning in the machine, then blend in different flavors of your own favorite choice. It is creamy, smooth and flavorful, I made it into two flavors, blueberry jam (leftover from my Blueberry Coconut Cake Roll) and chocolate ice cream, so yummy and perfect for the hot and humid weather! I’ll definitely like to make this ice cream again with mango, matcha, strawberry and pistachio for my family to enjoy!

Homemade Ice Cream
Ingredients
- 4 egg yolks
- 50 g caster sugar
- 280 g fresh milk
- 440 g dairy whipping cream
- 50 g caster sugar
- 80 g blueberry jam - or to taste
- 12 g cocoa powder + 2tbsp hot water
- 1 tsp vanilla extract
Instructions
- Blend egg yolks and sugar together until sugar dissolved, set aside.
- Gentle boil milk at low heat till small bubbles appearing at the sides of the pot. Then stir as you pour the warm milk into egg yolk mixture.
- Place the pot of egg yolk mixture over low heat, keep stirring constantly until the mixture is slightly thickens like soft custard. Check by drawing a line in the center and it should remain parted. Strain egg custard and set aside to cool down completely.
- Whisk whipping cream and sugar to soft peaks form. Pour egg custard into whipped cream, mix well to become plain ice cream and divide into two portions.
- Add blueberry jam into one plain ice cream and cocoa paste to the other half. Mix well both mixture and pour into serving cups, then place ice cream into freezer for at least 4 hours before consuming.
Notes
- For cocoa paste, mix cocoa powder with hot water, mix well and add vanilla extract, stir well and set aside.
- If prefer to have plain and simple ice cream, add 2 teaspoons vanilla to step 3.

- 口感细腻绵密, 奶香味十足. 配料简单,做法也简单
- 材料:
- 4粒 蛋黄
- 50克 细砂糖
- 280克 牛奶
- 440克 淡奶油
- 50克 细砂糖
- 80克 蓝莓果酱或适量 (食谱这里)
- 12克 可可粉+2汤匙 热水, 搅匀备用
- 1茶匙 香草香精
- 做法:
- 蛋黄和砂糖搅拌匀让砂糖融化,备用.
- 小火加热牛奶至微微开始要沸腾的状态, 周围一圈呈现小气泡就可以关火了. 然后慢慢倒入蛋黄糊中, 边冲边搅拌, 然后过筛待凉备用.
- 再把蛋糊放在小火上不停搅拌至呈现蛋奶酱, 要不停的搅拌至开始变微浓稠的状态,用手指划一下, 不会往下流就可以熄火了, 然后过筛待凉备用.
- 淡奶油和砂糖打发至湿性发泡. 加入蛋奶酱混合搅拌均匀成原味冰淇淋, 平均分成两份.
- 加入蓝莓果酱和巧克力糊各自放入原味冰淇淋中, 拌匀即可. 倒入小杯子里, 收进冰箱冷冻最少4小时即可享用.
- 做出一个原味冰淇淋就可以一次性结合自己喜欢不同口味的冰淇淋 ~ 芒果 草莓 抹茶 开心果 ~
- 可可粉和热水拌匀后加入香草香精再拌匀, 备用
- 喜欢原味冰淇淋,可加2茶匙香精到蛋奶酱里(步骤3)
