Ingredients
4egg yolks
50gcaster sugar
280gfresh milk
440gdairy whipping cream
50gcaster sugar
80gblueberry jam - or to taste
12gcocoa powder + 2tbsp hot water
1tspvanilla extract
Instructions
Blend egg yolks and sugar together until sugar dissolved, set aside.
Gentle boil milk at low heat till small bubbles appearing at the sides of the pot. Then stir as you pour the warm milk into egg yolk mixture.
Place the pot of egg yolk mixture over low heat, keep stirring constantly until the mixture is slightly thickens like soft custard. Check by drawing a line in the center and it should remain parted. Strain egg custard and set aside to cool down completely.
Whisk whipping cream and sugar to soft peaks form. Pour egg custard into whipped cream, mix well to become plain ice cream and divide into two portions.
Add blueberry jam into one plain ice cream and cocoa paste to the other half. Mix well both mixture and pour into serving cups, then place ice cream into freezer for at least 4 hours before consuming.
Notes
For cocoa paste, mix cocoa powder with hot water, mix well and add vanilla extract, stir well and set aside.
If prefer to have plain and simple ice cream, add 2 teaspoons vanilla to step 3.
