Cheesy Chicken Casserole 芝士鸡肉Casserole

Another easy way to finish off the leftover in my fridge and pantry, to make this healthy and delicious cheesy chicken casserole for my family as breakfast.  As usual, in my most of my recipes, this can also be made with foil paper cups for an easy grab and go. Just make it one day ahead and reheat in the toaster oven at 200 deg C for 10 minutes the next morning or at any time of the day.

Ingredients
 

  • 500 g cooked chicken breast - I used leftover roast chicken
  • 1 can cream of chicken soup or cream of mushroom soup - 300g
  • 150 ml fresh milk
  • 3 large eggs
  • 1 onion - shredded (about 150g)
  • 50-100 g broccoli - cut small
  • 100 g mozarella cheese - shredded
  • 1 tbsp coriander leaves - cut finely
  • dash of black pepper
  • 6 ramekins - grease with butter or use cupcake liners

Instructions
 

  • Cut cooked chicken into cubes. Fry shredded onion with oil till fragrant and dish up.
  • In a large bowl, combine cream of chicken, milk and eggs together, whisk to combine. Then add in all the reminding ingredients, mix well.
  • Pour mixture into the dish (or foil paper cups). Scatter more mozarella cheese on top with a dash of black pepper.
  • Bake in the preheated oven 180 deg C for about 40 - 45 minutes until golden brown.

 芝士鸡肉Casserole

      做法:

  1. 将鸡肉切成丁状。洋葱丝用少许油炒至香。
  2. 奶油鸡汤,牛奶和鸡蛋放入大碗中,混合均匀。然后把其余的材料都拌入蛋糊里,再搅拌均匀即可。
  3. 倒入准备好的六个盘皿中(锡纸i纸杯也可以),再撒上适量的莫扎里拉奶酪丝和黑胡椒粉。
  4. 送进预热烤箱摄氏170度烤约40-45分钟至表层金黄色即可。
