These Chocolate Mini Cakes are super easy to make with simple ingredients, baking time in just about 25-30 minutes. These cute mini cakes or bite size cakes are super soft and fluffy like eating clouds, perfect for snacking. They are not so sweet to my liking but you may add some chocolate chips on top before sending to bake in the oven.

Chocolate Mini Cakes
These cute Chocolate Mini Cakes or bite size cakes are super soft and fluffy like eating clouds, perfect for snacking.
Ingredients
- 2 tsp cocoa powder - sifted
- 1/2 tbsp corn oil
- 15 g fresh milk
- 1 tsp vanilla extract
- 15 g cake flour or plain flour
- 1 egg yolk - about 20g
- 1 egg white - about 37g
- 1/2 tsp lemon juice
- 15 g caster sugar
Instructions
- In a bowl, mix well cocoa powder and corn oil together. Add milk and vanilla, stir well again.
- Sieve in flour, stir well and egg yolk, stir well mixture.
- Whisk egg white and lemon juice until foamy. Add sugar, whisk until egg white to stiff peaks form.
- Fold meringue into cocoa batter in two separate round, fold well with a rubber spatula.
- Pour cocoa batter into piping bag and pipe into muffin pan with lined cupcake cases 90 percent full (Yield 35 pieces). Using a chopstick to stir the batter to release air bubbles. May add some chocolate chips on top.
- Bake in preheated oven at 130 degrees C for about 25-30 minutes.

- 材料:
- 2茶匙 可可粉, 过筛
- 1/2汤匙 玉米油
- 15克 牛奶
- 1茶匙 香草香精
- 15克 底筋面粉或中筋面粉
- 1粒 蛋黄 (约20克)
- 1粒 蛋白 (约37克)
- 1/2茶匙 柠檬只
- 15克 细砂糖
- 做法:
- 将可可粉和玉米油搅拌均匀.
- 筛入面粉, 搅匀; 加入蛋黄, 再搅拌均匀至顺滑.
- 蛋白和柠檬汁打致起泡泡,倒入细糖,打致硬性发泡.
- 打发蛋白分两次伴入可可面糊中, 用刮刀翻拌均匀即可.
- 将可可面糊装入裱花袋里, 挤入玛芬盘纸杯中至9分满 (可做35个). 用筷子搅一搅面糊把气泡搅散肖掉. 喜欢的话放上适量巧克力豆口感更丰富.
- 放入预热烤箱摄氏130度烤约25-30分钟即可.
