French Beans with Pine Nuts and Walnuts

Healthy! Healthy! Go nuts with this healthy dish! When I saw this recipe in Mind your Body (a weekly supplement from the Strait Times), I just wanted to make this healthy dish immediately. I tweaked the recipe a little by blanching the French beans instead of frying and added extra tomatoes (I love tomatoes!) and pine nuts. Simply love the combination, so delicious that I just can’t stop munching them.

“Fruit and vegetables are rich in soluble fibre, which lowers the level of “bad” cholesterol and , in turn, the risk of heart disease and stroke. Make them more heart healthy by cooking them in oil with less saturated fat and more unsaturated fat, and adding walnuts, which are rich in unsaturated fat.
When consumed, saturated fat is converted into low-density lipoprotein cholesterol, or “bad” cholesterol. In excess, it is deposited on artery walls, narrowing the arteries.
Unsaturated fat, however, turns into high-density lipoprotein  cholesterol, or “good” cholesterol, which gets rid of “bad” cholesterol.”  See! No more excuses for not trying this healthy dish yourself at home 🙂

Ingredients
  • 2 tsp Olive oil
  • 1 tsp Shallot, sliced
  • 1 tsp Garlic, chopped
  • 300g French beans
  • 8-10 Cherry tomatoes (red/orange), wth seeds removed and sliced
  • 20g Walnuts, toasted
  • 20g Pine nuts, toasted
Instructions
  1. Rinse French beans and cut it to 3 sections. Blanch French beans into boiling water with a pinch of salt for 2-3 minutes, dish up and drain well.
  2. In a preheated pan, saute the shall0t and garlic in the olive oil till they become fragrant, off heat.
  3. Add the French beans and sliced tomatoes, toss them well.
  4. Add salt and pepper to taste. Lastly add in the toasted pine nuts and walnut and serve.
