Old cucumber Soup is the most common soup in the Chinese family especially the Cantonese. Old cucumber is actually a matured cucumber. It is nutritious and healthy, helps to lower heatiness in our body and also good for complexion. I also added the bitter North almond (北杏)and sweet South Almond (南杏). The bitter North almond can exert a certain sedative effect on the respiratory nerve center, and has the effects of relieving cough and relieving asthma. This is an easy and fuss free recipe for this tasty soup.  Just cut the old cucumber with skin intact into chunks (remove the seeds or remain) and blanch the pork ribs in boiling water to remove the scum bits. Rinse the dry ingredients and place everything in the electric pressure cooker and start to cook at the soup button! It takes about 45 minutes to boil the soup in the pressure cooker while on the fire stove, you need to simmer the soup for at least one and the half hour.

Ingredients
 

  • 800 g old cucumber
  • 500 g pork ribs
  • 1 tbsp bitter almonds
  • 3 tbsp sweet almonds
  • 4 pcs dried scallops
  • 8 pcs red dates
  • 1600 ml water
  • 1 tsp salt - or to taste

Instructions
 

  • Scrub the skin of the old cucumber clean and cut it in half, length-wise and scoop out the seeds with a metal spoon.  Cut old cucumber with skin intact (prevent the flesh from turning mushy after cooking) into chunks and set aside.
  • Blanch the pork ribs in boiling water for a few minutes to remove the scum bits. Rinse the pork ribs and drain well, set aside.
  • Rinse the dry ingredients and drain well. Then place everything in the pressure cooker and start cooking! (about 45 mins). Then season with 1 teaspoon of salt or to taste.

老黄瓜汤 Old Cucumber Soup

老黄瓜煲汤喝不仅味道非常的清甜,而且营养也非常高。可以请热解毒和护肤的功效。烫里还加了南杏,北杏又名苦杏仁,它可以对呼吸神经中枢起到一定的镇静作用,具有止咳、平喘的功效 。

材料:

做法:
  1. 冲洗及刷干净老黄瓜,切半(要保留皮)去籽,然后切成块状。
  2. 排骨放入滚水中汆烫几分钟,捞起冲洗净沥干
  3. 将干料冲洗一下,沥干水分。 把全部材料放入高压锅里,盖上盖就可以开始煮喽(煮约45分钟左右)。最后放1茶匙盐或适量即可享用。**如要放在火炉上,要小火煲最少1.5小时。
