Winter Melon with Minced Pork

Winter melon (冬瓜dong gua in Mandarin) not only can be cooked in soup, its also can be stewed, stir fry or even made into dessert soup. Here is another simple and easy recipe to cook the winter melon with minced pork. A quick and comforting home cooked savoury dish to serve with white porridge or hot rice.

Winter Melon with Minced Pork

Quick and comforting home cooked savoury dish to serve with white porridge or hot rice

Ingredients
 

  • 500 g winter melon
  • 180 g minced pork - ground pork
  • 1 tsp minced ginger
  • 1 tbsp tau chiew - preserved soya beans

Seasoning

  • 1/2 tsp light soy sauce
  • 1 tsp dark soy sauce
  • 1 tsp sesame oil
  • 1/4 tsp chicken powder
  • 1/4 tsp corn flour
  • 120 ml water

Instructions
 

  • Chop winter melon to cubes (remove rind and seeds).

  • Heat wok and add 2 tablespoons cooking oil, fry ginger and garlic for a while and add preserved soya beans and continue to stir fry to aromatic.

  • Add minced pork, fry well and add seasoning, followed by winter melon cubes. Bring mixture to boil, cover with a lid and lower heat and simmer for about 15-20 minutes till winter melon becomes translucent.

  • Dish up and garnish with some cut spring onion and serve with hot rice or porridge.

冬瓜炒肉碎 Winter Melon with Minced Pork

  1. 冬瓜切块状(去皮去籽)。
  2. 热炒锅加入2汤匙油,将姜末和蒜蓉翻炒几下,加入豆酱再翻炒至香。
  3. 加入肉碎炒匀,放入调味料和冬瓜煮滚,盖上盖,改换小火焖煮15-20分钟至冬瓜透明,
  4. 上碟撒上葱花即可马上享用。配稀饭干饭都很赞。
