Ingredients
225gself-raising flour - sifted
145gcaster sugar
125gbutter - softened
1tspvanilla extract
1tbsplemon juice
lemon zest from 1 lemon
2largeeggs
125mlmilk
1red apple - cored and thinly sliced
100gblueberries - fresh or frozen
2tbspnatural raw sugar to sprinkle - optional
Instructions
Preheat oven to 160C degree C. Grease 8 inch (20cm) spring form tin and lined with non-stick baking paper.
Place flour, sugar, soft butter, vanilla, lemon juice & zest, eggs and milk in the bowl of an electric mixer and beat until just combined, pour mixture into cake tin. Top with the apple slices and blueberries and sprinkle with raw sugar (you may omit the sugar).
Bake for 45 minutes or until the cake is cooked when tested with a skewer. Leave cake to cool before dusting on confectionery sugar (or snow powder) before serving.
Notes
The apple slices will sink to the bottom after baked if it is thickly sliced, so must slice them thinly.You may add more blueberries on top on the batter after 10 minutes of baking.Please keep in mind that all oven temperatures and baking time varies.
