peeled and cored, diced
Instructions
Preheat oven to 180 deg C. Place six cupcake liners in muffin pan and set aside.
Combine egg and sugar together till sugar dissolved followed by lemon juice and vanilla extract with a hand whisk. Stir in oil and milk.
Sift the flour, baking powder and baking soda into the egg mixture. Drop in the apple dices and fold with a rubber spatula until well combined.
Spoon batter into muffin cups. Bake in oven for 25-30 minutes.
Serve muffins with some dusted cocoa powder.
Notes
Please keep in mind that all oven temperatures and baking time varies.
