Apple Muffins 苹果玛芬
Muffins are easy to make with just a few quick stirrings and these apple muffins are perfect for anytime of the day. They are moist and tender, studded with fresh apple. You can just store these apple muffins in the refrigerator and don’t even need to reheat them for morning breakfast or grab to go. You can use green or red apples of your choice with a teaspoon of cinnamon powder to enhance a better and aroma flavour.
Apple Muffins
Ingredients
- 125 g cake flour or plain flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 large egg
- 85 g caster sugar
- 65 ml corn oil
- 60 ml fresh milk
- 1 tsp vanilla extract
- 1 tsp lemon juice - optional
- 1 red apple - peeled and cored, diced
Instructions
- Preheat oven to 180 deg C. Place six cupcake liners in muffin pan and set aside.
- Combine egg and sugar together till sugar dissolved followed by lemon juice and vanilla extract with a hand whisk. Stir in oil and milk.
- Sift the flour, baking powder and baking soda into the egg mixture. Drop in the apple dices and fold with a rubber spatula until well combined.
- Spoon batter into muffin cups. Bake in oven for 25-30 minutes.
- Serve muffins with some dusted cocoa powder.

玛芬蛋糕很松软,即使放入冰箱冷藏到隔天也一样好吃。
材料:
- 125克 底筋或中筋面粉
- 1/2茶匙 泡打粉
- 1/2茶匙 苏打粉
- 1个 大鸡蛋
- 85克 细砂糖
- 65毫升 玉米油
- 60毫升 牛奶
- 1茶匙 香草香精
- 1茶匙 柠檬汁
- 1粒 红苹果,去核,去皮,切粒状 (可用青苹果)
做法:
- 预热烤箱至摄氏180度。放六个纸杯在玛芬烤盘内,备用。
- 将鸡蛋与细糖混合均匀(用手动打蛋器),加入香精及柠檬汁,再拌匀,接着加入油及牛油,拌匀。
- 把粉类一起过筛到鸡蛋混合物中,加入苹果粒;用橡皮刮刀翻拌均匀即可(不要过度的搅拌)。
- 把面糊舀入纸杯中,放进烤箱烘约25-30分钟。
- 撒上少许可可粉在玛粉上即可享用。
- 喜欢的话,可加入一茶匙肉桂粉增添香味。
- 烤箱温度和烘烤时间务必根据自家烤箱来定
Hi Ann, I baked these muffins yesterday and replaced the caster sugar with xylitol. I also added 1 tbsp. of plain yogurt. The muffins were soft and fluffy. Next time I will omit the plain yogurt and see if it’s still soft and fluffy. This apple muffin recipe is a keeper compare to others I have tried. The ingredients used are available in the pantry, need not buy additional ingredients. I wonder if these muffins can be kept in the fridge or chiller for how long. Any advice? Thank you 🙂
Hi Christina, Is ok to go without adding yogurt as there is baking soda and the apples make the cake moist and tender. You can keep the muffins in the fridge for about a week.

Hi Kelina, Baking soda will keep the cake soft but you can add a tablespoon of natural yohurt before sifting in the flour.
natural yogurt like greek yogurt or original non fat yogurt?
