Instructions
Prepare 8 x 4.5 inch rectangular baking pan, lined the bottom with parchment paper. Preheat the oven to 180 deg C.
Beat butter at medium speed until smooth. Then add in brown sugar gradually and beat well.
Add in beaten egg and vanilla extract at low speed, followed by mashed banana, mix well.
Sift plain flour, baking powder and baking soda into banana mixture, followed by wholemeal flour. Then fold well to combine with a rubber spatula.
Pour banana batter mixture into the baking pan and smooth the surface with a rubber spatula. Place banana slices on top and sprinkle some muscovado sugar on top.
Bake in the preheated oven for about 40-45 minutes. Leave cake to cool before serving.
