Ingredients
500gboneless chicken thigh
1medium sizeonion - shredded
3largeeggs - or 4 eggs
Marinate
1tspginger juice
1/2tbspcornstarch
1/2tbspwhite rice wine
dash of pepper
Seasoning
4tbspKikkoman soy sauce
5tbspmirin
1/2tspdark soy sauce
1tbspwhite rice wine
100mlwater
1/2tspminced garlic
1/2tspminced ginger
Instructions
Cut chicken thigh into bite size pieces. Marinate with ginger juice, cornstarch, white rice wine and with a dash of pepper for 15 minutes.
Mix all the seasoning sauce ingredients into a cup and set aside.
Add some oil in the non stick pan (9 inches pan), pour in the marinated chicken meat and fry at medium heat on both sides to semi cook (slightly brown), about 1 minute on each side.
Drop in shredded onion and stir well, pour in seasoning sauce and bring it to a boil. Cover with lid for 2 minutes.
Crack eggs into cup and lightly beaten, pour it over chicken meat and do not stir the beaten egg . Cover with lid again at low heat for another minute or until egg just set. Serve immediately with hot rice and enjoy!
