Chocolate Muffins
These Chocolate Muffins are super easy to make with only 2 steps! The muffins were soft and a little crumbly, so perfect with a cup of coffee.

cake flour or plain flour

Instructions
In a bowl, combine eggs, sugar, corn oil, milk and vanilla mix well with a hand whisk.
Sieve in flour, cornstarch, cocoa powder, baking powder and salt. Stir well gently.
Pour chocolate batter into cupcake cases till 80 percent full, then add chocolate chips on top.
Bake in preheated oven at 170 degrees C for about 22-25 minutes or until a skewer inserted into cake comes out clean.
Notes
Do not overmix the batter, the gluten in the flour can form elastic gluten strands – resulting in a more dense, chewy texture.
May add a little more chocolate chips into the batter if you have a sweet tooth.
Please keep in mind that all oven temperatures and baking time varies.
