Chocolate Muffins 巧克力玛芬
These Chocolate Muffins are super easy to make with only 2 steps! Firstly combine well the wet ingredients in a bowl, then come to sift in the dry ingredients and gently whisk mixture well in the next step. It takes only 10 minutes to do the preparation and off to pop into the oven to bake for about 22-25 minutes. The chocolate muffins were soft and a little crumbly, so perfect with a cup of coffee.

Chocolate Muffins
Ingredients
- 2 eggs
- 80 g caster sugar
- 80 g corn oil
- 160 g fresh milk
- 1 tsp vanilla extract
- 120 g cake flour or plain flour
- 20 g cornstarch
- 40 g cocoa powder
- 1 tbsp baking powder
- 1/4 tsp salt
- chocolate chips - for topping
Instructions
- In a bowl, combine eggs, sugar, corn oil, milk and vanilla mix well with a hand whisk.
- Sieve in flour, cornstarch, cocoa powder, baking powder and salt. Stir well gently.
- Pour chocolate batter into cupcake cases till 80 percent full, then add chocolate chips on top.
- Bake in preheated oven at 170 degrees C for about 22-25 minutes or until a skewer inserted into cake comes out clean.
Notes
- Do not overmix the batter, the gluten in the flour can form elastic gluten strands – resulting in a more dense, chewy texture.
- May add a little more chocolate chips into the batter if you have a sweet tooth.
- Please keep in mind that all oven temperatures and baking time varies.

- 120克 底筋面粉或中筋面粉
- 30克 玉米淀粉
- 40克 可可粉
- 1汤匙 泡打粉
- 1/4茶匙 盐
- 巧克力豆撒面
- 将鸡蛋,砂糖,玉米油,牛奶和香精放入碗中,搅拌均匀.
- 筛入面粉,玉米淀粉,可可粉,泡打粉和盐. 轻轻的把混合物再次搅拌均匀可.
- 把巧克力面糊倒入纸杯至8分满,然后放上巧克力豆即可.
- 放进预热烤箱170度烤约22-25分钟或竹签插入蛋糕内部,拔出没有粘糊,就表示熟了。
- 过度的搅拌面粉会起筋使烤出来的体质会很扎实
- 喜欢蛋糕体更甜的话可加适量巧克力豆在面糊里拌匀
- 烤箱温度和烘烤时间务必根据自家烤箱来定
