Ingredients
4eggs
50gprawn - without shell
80gbroccoli
30ggrated mozzarella cheese
salt & pepper
Instructions
Clean prawns and cut to cubes. Season with some salt and pepper, set aside.
Blanch broccoli in boiling water with some salt for 2-3 minutes. Then drop the broccoli in cold water for a minute. Strain and cut broccoli finely.
Break eggs into a bowl and mix in all the ingredients with dash of salt and pepper.
Heat pancake pan with oil. Scoop egg mixture evenly into the 4 cavities at medium low heat for about 2-3 minutes to almost set, then turn egg cake over for another minute to set. Then it is ready to serve.
