Prawn Egg Cake 虾蛋饼
This Prawn Egg Cake is a quick make breakfast or even to make as a quick snack for an afternoon tea break. It takes less than 15 minutes to make four prawn egg cakes in one pancake pan and you can enjoy this light healthy morning breakfast with a cup of hot coffee before you head to work or even grab to go.

Prawn Egg Cake
Ingredients
- 4 eggs
- 50 g prawn - without shell
- 80 g broccoli
- 30 g grated mozzarella cheese
- salt & pepper
Instructions
- Clean prawns and cut to cubes. Season with some salt and pepper, set aside.
- Blanch broccoli in boiling water with some salt for 2-3 minutes. Then drop the broccoli in cold water for a minute. Strain and cut broccoli finely.
- Break eggs into a bowl and mix in all the ingredients with dash of salt and pepper.
- Heat pancake pan with oil. Scoop egg mixture evenly into the 4 cavities at medium low heat for about 2-3 minutes to almost set, then turn egg cake over for another minute to set. Then it is ready to serve.

- 材料:
- 4 个 鸡蛋
- 50克 虾
- 80克 西兰花
- 30克 莫扎里拉奶酪丝
- 盐和胡椒, 适量
- 做法:
- 虾洗净切粒. 撒上适量盐和胡椒粉拌匀,备用.
- 西兰花汆烫(放入少许盐)约2-3分钟,然后放入冷水浸泡1分钟。沥干水分,切碎。
- 碗中打入鸡蛋和全部材料混合均匀, 再撒入适量盐和胡椒粉, 搅匀即可.
- 加热松饼锅,刷上油. 将鸡蛋混合物平均舀入, 静置约2-3分钟至鸡蛋将近凝固. 然后翻面约1分钟即可盛出享用.
