Chinese Honey Cake 蜂蜜小蛋糕
This Chinese Honey Cake tasted like the traditional old fashioned Egg Cake (鸡蛋糕), soft and spongy but with the addition of honey to bring a golden crust on the cake. This aromatic honey fragrance small cake is really incredibly simple to make and yummy. Definitely a keeper recipe!

Chinese Honey Cake
Ingredients
- 4 eggs
- 1 tsp lemon juice
- 40 g caster sugar
- 70 g honey
- 125 g cake flour or plain flour
- 40 g corn oil
Instructions
- Break eggs into mixing bowl together with lemon juice, sugar and honey. Whisk at high speed for 3 minutes until batter is thick. To test it, you can write a letter "O" on the surface of egg batter and it should stay there, then you have the right consistency.
- Sieve flour into egg mixture in 3 batches and fold well quickly and carefully with a rubber spatula.
- Lastly mix in corn oil and combined well.
- Pour batter into muffin pan (grease pan with butter), drop pan twice on counter top to remove air bubbles. Then sprinkle some white sesame seeds on top.
- Bake at 170 degrees C for about 20 minutes.

- 4个 鸡蛋
- 1茶匙 柠檬汁
- 40克 细砂糖
- 70克 蜂蜜
- 125克 底筋面粉或中筋面粉
- 40克 玉米油
- 鸡蛋,柠檬汁,砂糖和蜂蜜放入碗中.高速搅打3分钟至松发,提起蛋糊画O字不消失即可.
- 面粉分3次筛入, 用刮刀翻拌至无干粉即可.
- 最后倒入玉米油,再拌匀.
- 玛芬盘内抹上牛油, 倒入面糊,镇平两下震出气泡. 表面撒点白芝麻.
- 送人预热烤箱摄氏170度烤约20分钟即可.
