Ingredients
150gcake flour
3/4tbspbaking powder
1/8tspbaking soda
2eggs - 65g each
90gcaster sugar
1/2tspvanilla extract
180gripen bananas - net weight, 3 bananas - mashed
pinch of salt
75gcorn oil
Instructions
In a mixing bowl, beat eggs until foamy at low speed. Slowly add in sugar to combine. Then beat with medium high speed for about 5 minutes until the mixture is pale and reaches ribbon stage.
Add vanilla extract, smashed bananas and salt to mix.
Combine cake flour, baking powder and baking soda together and sieve flour mixture into the egg mixture in 3-4 batches. Gently fold mixture to incorporate till just well combined. Lastly, add oil to combine well.
Spoon the batter into 8 or 9 cupcake moulds until 90% full. Lightly tap the base of the mould to release the air bubble.
Heat up steamer pot with boiling water. Place cakes inside the steamer. Wrap the cover with muslin cloth (to avoid condensation during steaming). Steam at high heat for 15 minutes and serve.
