Steamed Banana Cake 蒸香蕉蛋糕
After making the easy steamed cake and sharing the post two weeks ago, I’m now hooked on steaming rather than baking cakes. Due to the current hot and humid weather, I find that steaming cakes is not only easy but I can also stay away from my hot oven and yet churn out some cakes. Since I had some leftover bananas I made this steamed banana cake which is soft, healthy and delicious (recipe source). I must admit that this small cake tastes surprisingly good, filled with banana flavour and aroma (in fact I had two in a go!) I’m sure you’ll definitely give your thumbs up if you give this recipe a try!

Steamed Banana Cake
Ingredients
- 150 g cake flour
- 3/4 tbsp baking powder
- 1/8 tsp baking soda
- 2 eggs - 65g each
- 90 g caster sugar
- 1/2 tsp vanilla extract
- 180 g ripen bananas - net weight, 3 bananas - mashed
- pinch of salt
- 75 g corn oil
Instructions
- In a mixing bowl, beat eggs until foamy at low speed. Slowly add in sugar to combine. Then beat with medium high speed for about 5 minutes until the mixture is pale and reaches ribbon stage.
- Add vanilla extract, smashed bananas and salt to mix.
- Combine cake flour, baking powder and baking soda together and sieve flour mixture into the egg mixture in 3-4 batches. Gently fold mixture to incorporate till just well combined. Lastly, add oil to combine well.
- Spoon the batter into 8 or 9 cupcake moulds until 90% full. Lightly tap the base of the mould to release the air bubble.
- Heat up steamer pot with boiling water. Place cakes inside the steamer. Wrap the cover with muslin cloth (to avoid condensation during steaming). Steam at high heat for 15 minutes and serve.

烤香蕉蛋糕吃多了,那可以试一试这松软的蒸香蕉蛋糕吧!
材料:
- 150克 低筋面粉
- 3/4汤匙 泡打粉
- 1/8茶匙 苏打粉
- 2个 全蛋, 约65克一个
- 90克 细砂糖
- 1/2茶匙 香草香精
- 3条 熟透香蕉 (去皮 – 180克),压烂
- 盐少许
- 75克 栗米油
- 做法:
- 用电动打蛋器将鸡蛋打法至起小泡泡,慢慢加入细糖至均匀。然后转换中速度继续搅打蛋糊至泛白,约5分钟。
- 倒入香蕉泥及少许盐,混合均匀。
- 将面粉,泡打粉及苏打粉混合均衡。分3-4批筛入蛋糊里,用橡皮刮刀轻轻的翻拌均匀。最后倒入栗米油,再拌匀即可。
- 将香蕉面糊倒入8-9个纸杯中 或9分满。轻轻震出气泡。
- 用大火把水煮滚,小蛋糕放人蒸锅,锅盖包上一块干净布,以免蒸水滴入,蒸15分钟即可享用。
