Ingredients
200gprawn paste
40gbroccoli
1/2tsplight soya sauce
1/4tspsugar
1/2tspsesame oil
dash of pepper
dumpling skin
Instructions
Blanch the broccoli in boiling water with some salt for 2-3 minutes. Then drop the broccoli in cold water for a minute. Strain and cut broccoli finely.
Place all the ingredients in a bowl and mix well.
Place about 1 tablespoon prawn mixture in the middle of the wrapper and moisten the edge with little water (or moisten the wrapper before adding in the filling). Fold it up and seal, then place the top side down. Repeat the same until you use up the ingredients (makes about 9 pieces).
Place a clean piece of parchment paper in the steamer and place prawn dumplings on top, then brush with some cooking oil, cover lid and steam at high heat for about 10 minutes. Serve hot immediately with your favourite dipping sauce - vinegar or chilli sauce.
