800gspare ribs, chopped - or use beef
1largeonion - shredded
3tomatoes - at step 2**
2tbsptomato paste
2tbsplight soya sauce
1tbspdark soya sauce
5golvegarlic
2star aniseeds
3bay leaves
1tbsprock sugar - or to taste
600mlhot water
3tomatoes - wedges
Instructions
Rinse spare ribs under and place spare ribs in a pot of cold water with 2 stalks of spring onion and 2 slices ginger. Bring to boil for 2-3 minutes to remove the scum bits. Rinse the spare ribs in warm water and strain well, set aside.
Slice a shallow cross at the bottom of 3 tomatoes. Then drop into a pot of boiling water for about 20 seconds. Dish out once their skins start splitting. Peel off the tomato skin and chop to cubes.
Pan fry onion and garlic with oil for a while and add in spare ribs. Sear spare ribs on both sides.
Add tomato cubes, 2 heapful tablespoons of tomato paste, light soya sauce, dark soya sauce and hot water, stir well.
Lastly add aniseeds, bay leaves and rock sugar and hot water, stir well mixture.
Bring mixture to the boil and transfer spare ribs to the pressure cooker, turn to medium low heat for about 20-25 minutes. Off heat, allow pressure to come down naturally, about 15 minutes. Or cook spare ribs in a pot, reduce heat and simmer at low heat for about 50 minutes or till soft and tender.
Transfer spare ribs from pressure cooker into another pot with 3 more tomatoes (cut to wedges) and simmer at low heat for another 10-15 minutes. Off heat and serve immediately. **add 1-2 more tomatoes if you prefer**
