Stewed Spare Ribs with Tomatoes 番茄炖排骨
This Stewed Spare Ribs with Tomatoes is a comforting hearty dish simmered in tomato sauce. So perfect to go with hot rice. To shorten the time of cooking, I used a pressure cooker to cook this savoury and sourish delicious dish in less than 25 minutes or you can use a normal pot to simmer the spare ribs for about 50 minutes or till soft and tender.

Stewed Spare Ribs with Tomatoes
Equipment
- Pressure cooker
Ingredients
- 800 g spare ribs, chopped - or use beef
- 1 large onion - shredded
- 3 tomatoes - at step 2**
- 2 tbsp tomato paste
- 2 tbsp light soya sauce
- 1 tbsp dark soya sauce
- 5 golve garlic
- 2 star aniseeds
- 3 bay leaves
- 1 tbsp rock sugar - or to taste
- 600 ml hot water
- 3 tomatoes - wedges
Instructions
- Rinse spare ribs under and place spare ribs in a pot of cold water with 2 stalks of spring onion and 2 slices ginger. Bring to boil for 2-3 minutes to remove the scum bits. Rinse the spare ribs in warm water and strain well, set aside.
- Slice a shallow cross at the bottom of 3 tomatoes. Then drop into a pot of boiling water for about 20 seconds. Dish out once their skins start splitting. Peel off the tomato skin and chop to cubes.
- Pan fry onion and garlic with oil for a while and add in spare ribs. Sear spare ribs on both sides.
- Add tomato cubes, 2 heapful tablespoons of tomato paste, light soya sauce, dark soya sauce and hot water, stir well.
- Lastly add aniseeds, bay leaves and rock sugar and hot water, stir well mixture.
- Bring mixture to the boil and transfer spare ribs to the pressure cooker, turn to medium low heat for about 20-25 minutes. Off heat, allow pressure to come down naturally, about 15 minutes. Or cook spare ribs in a pot, reduce heat and simmer at low heat for about 50 minutes or till soft and tender.
- Transfer spare ribs from pressure cooker into another pot with 3 more tomatoes (cut to wedges) and simmer at low heat for another 10-15 minutes. Off heat and serve immediately. **add 1-2 more tomatoes if you prefer**

- 排骨软烂, 汤汁酸爽浓郁好下饭~
- 材料:
- 800克 排骨, 切块, 可用牛肉
- 1粒 大洋葱, 切丝
- 3粒 番茄 (看步骤2)
- 2大匙 番茄酱
- 2汤匙 酱青
- 1汤匙 黑酱油
- 3粒 蒜头
- 2粒 八角
- 3片 香叶
- 1汤匙 冰糖 或适量
- 600毫升 热开水
- 3粒 番茄, 切成楔形
- 做法:
- 排骨清水冲洗净, 放入冷水锅中, 放上2根葱和2片姜. 水开后煮 2-3 分钟,煮开撇浮沫捞出排骨,用温水冲洗干净, 沥干水分.
- 在番茄底部用刀划“十”字. 放入热开水泡煮约20秒。待表皮裂开后捞起, 轻轻把皮撕开, 然后切成丁状.
- 热锅加少许油翻炒几下洋葱和蒜头粒, 加入排骨, 两面煎至金黄.
- 下来放入番茄丁, 两大汤匙番茄酱, 酱青, 黑酱油和热开水.
- 最后加入八角, 香叶和冰糖, 翻炒均匀.
- 烧开排骨混合物, 然后放进高压锅里, 让锅内水煮开了, 转入中小火煮20-25分钟, 熄火.等待高压锅内冷却约15分钟,就可以打开锅盖了。不用高压锅的话, 就把排骨用小火炖约50分钟或至排骨软烂.
- 排骨从高压锅取出倒入另一锅中, 加入(切成楔形状)番茄, 盖上盖小火焖煮约10-15分钟左右即可享用. **喜欢的话可加多1-2粒番茄**

Can l transfer contents to a slow cooker? Do l need to add a bit more water?
Hi Charlotte, Yes transfer contents to slow cooker instead of pressure cooker. No problem to add a little more water when you find the sauce is drying up.
If not using pressure cooker, still need to transfer cooked spare ribs to another cooker to simmer with 3 more tomatoes?
Hi Angeline, No need to transfer. Just cook directly from the pot to the end. Yes, add 3 or more tomatoes to your taste in the end to enhance better flavour to the dish.
