This Yoghurt Burnt Cake with burnished black top is moist and creamy in texture, melts in your mouth, soft like cheesecake. It's baked in an air fryer, healthy and delicious with very simple ingredients.

Ingredients
3largeeggs - room temperature
70gcaster sugar
1lemon zest
1/2tbsplemon juice
1tspvanilla extract
35gcake flour or plain flour
500gGreek natural yoghurt - room temperature
Instructions
Mix eggs, sugar , lemon zest, lemon juice and vanilla together with a hand whisk.
Sieve in flour and stir well.
Lastly add in yoghurt, stir well again.
Pour batter into a 7 inch lined cake pan. Bake in an air fryer at 170 degrees for 25 minutes.
Chill cake together with the cake pan in refrigerator for a few hours or till next day before serving.
